Amaretto Cake

At my first job after college, we had a lot of office parties. We joked that the company’s acronym actually stood for “Food and Entertainment Company.” You’ve probably guessed I gained a few pounds while I worked there! One day my boss, Lin, brought in this delicious Amaretto cake. And when everyone asked for the recipe, she was kind enough to share!

Take a yellow cake mix and instant vanilla pudding.

Add eggs, vanilla and Amaretto.

Beat it!

Put the pecan chips in the bottom of the greased pan.  Wait?  What?  Those aren’t pecans!  They’re almonds… I forgot to buy pecans.  Oops.

Pour the batter into the pan.

And pop it in the oven for 50 to 60 minutes.

When it’s done, it’s this beautiful golden color.  Let it cool in the pan for about 30 minutes and turn it onto a plate.

Then poke it all over so the glaze can go into the cake.  Pretend it’s someone who’s been annoying you lately!

Melt the glaze ingredients and bring it all up to a boil.

And finally, drizzle the glaze all over the cake.  Yum!

This cake didn’t last long!  I guess I’ll have to make another one!
